Description
Winemaker Tim Phillips makes tiny-batch wines and ciders on his delightful property near Lymington in Hampshire. He has numerous ancient apple trees both within and around his Victorian walled garden, from which this dry cider has been made. Based on an almost forgotten northern Italian tradition of “vin ed pom”, this has an addition of red wine (95% apples, 5% wine). The earthiness of the red apple shines through, with hints of red berry and sourdough.
