Just as in cooking, it is essential that neither the wine nor the dish overpowers the other – the use of barrel ageing is to enhance the sensory experience. Intense cherry aromas, perfectly ripe and almost candied – other notes of red fruit emerge discreetly evoking raspberry, redcurrant and wild strawberry. On the palate a delicate world of richness, finesse and elegance. The oak is never dominant but enhances the wine. The finish is with notes of Morello cherry and almond. Beef Bourguignon is the classic match but also game and duck.
